1 boneless, skinless chicken breast cooked and diced
4 1/2 cups chicken broth (bouillon and water)
1/2 onion chopped
1/2 tsp oregano
1/2 tsp basil
1/4 tsp pepper
frozen mixed veggies
pasta (I like to use rotelle or rotini)
Bring chicken broth to boil adding spices and onion while it's heating up. Toss in veggies and pasta (as much as you want) and boil for 7-10 minutes until pasta is cooked. While that's boiling, cook the chicken in the microwave and dice it up. Toss the chicken in the pot when it's done.
This is one of our "staples", especially in the winter. It's quick and easy (only takes about 20 minutes total) and kid-friendly. If you like a lot of broth with your soup, add less pasta and veggies. If your kids usually leave the "juice" in their bowls, add more pasta and veggies.
