Aeblskivers

Hugh sent this out to Brownclan a while ago, and I wanted to include it here.

So here it is!

I've been looking at pans and came across a review that recommended this video on how to get spherical Aeblskivers. She does it via quarter turns.

Cardamom Rice Pudding

I absolutely adore this rice pudding that I adapted from the Joy of Cooking

1 cup short grain rice
6 cups milk (I've only tried this with whole milk)
1/2 tsp salt
4 green cardamom pods
2 tsp of sugar
2 T butter
Cook the rice in the milk, salt, and cardamom in double boiler stirring often. Make sure the water in the bottom pan doesn't boil off.  You'll know it is done when the rice has expanded and absorbed almost all the milk.  Take it off the heat and stir in the sugar and butter.  Serve hot and then serve the left-overs well chilled.

I love the slightly perfumy combination of jasmine rice and cardamom but if that isn't your thing, you can replace the cardamom with vanilla or lemon rind.  I also enjoy adding dried cherries in the last 10 minutes of cooking so they plump up and offer a sweet-tart counterpoint to the creamy richness of the pudding.  I ate something very like this on my mission with cinnamon sugar or good jam and enjoy that as well.

Aebleskivers

3 eggs, separated
2 c. buttermilk
2 c. flour
1 Tbsp sugar
1/2 tsp salt
1 tsp bkg soda
1 tsp bkg powder
------------
A slightly larger batch:
4 eggs, separated
3 c. buttermilk
3 c. flour
1 Tbsp sugar
1/2 tsp salt
1 tsp bkg soda
1 tsp bkg powder

Sour Cream Coffeecake

This is one of Gia's recipes. We made it with full fat sour cream and it produced an extremely tender and delicious coffeecake. We made it again the next day.

1 stick butter
1 c. sugar
2 eggs
1 tsp vanilla
2 c. flour
1 tsp bkg powder
1 tsp bkg soda
1 grated lemon or orange rind
1 c. sour cream
1/4 c. chopped pecans
2 Tbsp cinnamon
2 Tbsp sugar
1/2 stick melted butter

Cream together butter, sugar, eggs and vanilla. Sift together flour, powder & soda. Sitr into creamed mixture. Add citrus rind and sour cream. Pour into greased 9x13 pan. Mix cinnamon, sugar & chopped pecans together. Sprinkle on top, use a knife to swirl it into the batter. Pour melted butter over the top. Bake at 350 for 40-50 minutes.

Green Chili Casserole


This is very good, verrrry rich, makes great leftovers, and is wicked easy and quick to prepare *EXCEPT* for the four hour + refridgeration time prior to cooking.

Green Chili Casserole:

6 lg flour tortillas (or enough corn to cover the casserole dish)
2 cans 7oz.diced mild green chilies
2 cups grated Monterrey jack cheese
2 cups grated sharp cheddar cheese

Mix in separate bowl;

5 eggs beaten
2 cups milk
Pepper & Salt to taste
Hot sauce to taste (Tabasco Chipotle sauce is great)


9x12 glass casserole dish
Butter the dish – put in 3 tortillas – spread out one can of green chilies – 2 cups cheese –

2nd layer:
layer 3 tortillas - spread out one can of green chilies – 1/2 cup cheese

Pour egg / milk mix over entire dish

Cover with foil and refrigerate for at least 4 hours. (overnight is great)

Preheat oven to 350 degrees

Bake for 30 – 40 minutes.

Great with Trader Joe's Enchilada Sauce (or other brand I'm sure.)

The Best Oatmeal Porridge on Earth

This is a recipe that provoked the following praise. This is so good Spencer, I would have married you just for this, Well, this and your car.

The Best Oatmeal Porridge on Earth
Serves 2
1 c. old fashioned rolled oats (not instant nor quick)
1 c. 2% milk
1 c. water
1 handful (not to exceed 1/4 cup I'd guess) raisins

Add everything to a sauce pan, cook over medium heat until it begins to boil, stir well and serve.

At the table a selection of jams and jellies, brown sugar, cinnamon, honey, fresh fruit, (peaches and blueberries mmmmmm!!) will be the perfect compliment.

Variations we've tried: In addition to the raisins we have also added each item on this list to the oats as they are cooking: dried apples, grated fresh apples, and craisins.

Quick (but still tasty and totally from scratch) Cinnamon Rolls

I jotted this recipe down on a tiny bit of paper at a friend's house, so it has little in the way of detailed instructions, but it works out very well! The thing that is awesome about this recipe is that they only rise for ten min. not sure how it works, but it's yummy.

Preheat oven to 425.

Mix and let sit ten min:

1 1/2 cup warm H2O
1/2 cup oil
1/4 cup sugar
2 tblsp yeast
1/2 tblsp salt

Then, add 1 large egg (beaten). Add approx 5 cups flour (enough to make a good dough).

Roll out and spread cinnamon mixture evenly over dough.

Cinnamon Mixture:

1/2 cup melted margarine and/or butter
3/4 cup sugar
6 heaping teaspoons cinnamon

Roll it up pretty tightly, make sure the edge seam is sealed tight. Cut into rolls. Place in a greased pan. Let rise about 10 minutes in pan. Then, bake ten min. at 425.

Frost when still warm, but not hot, with:

Mix together:
3 tablsp margarine and/or butter, melted
2 1/4 cup powdered sugar
1/8 cup milk
3/4 tsp vanilla
orange zest (optional)

gloat over your yummy cinnamon rolls that only had to rise for ten minutes (optional)
