I've long been interested in eating more dark leafy greens - good for me, satisfying, cool flavors - but I never have ideas for how to cook 'em. Could folks post some suggestions, probably as new posts rather than as comments, so everyone can see them? Greens I'm thinking of include, but are not limited to: spinach, mustard greens, bok choy, kale, etc... Thanks so much!

Adrian and I have 3 or 4 wonderful recipes for Kale which is one of our favorite dark and leafys. I'll try to get them up over the next couple of days.
