I'm a hard core potato lover and I found the perfect cookbook for me: One Potato, Two Potato by Roy Finamore. I ran across it at the library and made enough of the recipes out of it that I bought a copy. It has a full range of recipes from easy to complex and a full range of flavors as well. The different types of potatoes are used in recipes suited for them, and even sweet potatos are included. I love it. The recipes I just posted are all from this cookbook.

this looks like a v. cool cookbook. I looove potatoes but rarely cook them cause i always have this idea that they'll take forever, but am always happy/surprised when i do cook em, cause it's not that bad. sweet potatoes ROCK.
ANy other cookbook recommendations? my favorites are Vegetarian Cooking for Everyone by Deborah Madison, and the Moosewood cookbooks, especially Moosewood Lowfat Favorites. there are fantastic recipes in the moosewood lowfat book.
