Tortillas

Plain tortilla recipe in 3 sizes/variations
1 c. flour 2 c. 3c Can use part whole wheat
1 t. baking powder 0 2 t.
1 T shortening or lard 1/4 c. 4-6 T
salt 1/4 t 1/2 t 1 t
warm water 1/2 c. 1 1/4 c.

Mix dry ingredients. Cut in fat.
Gradually add warm water til dough is soft, but not sticky
Form into balls. Each version suggests 12. Obviously with the smallest
recipe, you'll get little tortillas.
Let balls rest, covered with saran wrap or cotton towel for 30 min or so.
Flatten one between floured hands. Roll on lightly floured surface,
from center up, then center down, then turn 90 degrees, and repeat, to
get a thin circle.
Heat on flat griddle or cast iron frying pan pver medium/med high heat,
til brown speckled on each side. Cover in towel until ready to eat.
